Red Beans & Rice
Serves 2-4


1 Pound Small Read Beans

1 Medium Yellow Onion

2 Celery Sticks

3 Cloves of Garlic

1/2 Pound Margarine

1/2 tsp Red Pepper

1 tsp Salt

1/2 tsp Black Pepper

1/ Pound Smoked Andouille Sausage

1 Gallon Water



- Wash Beans and soak for 8-12 hours.

- Chop Onion, Celery, and garlic, saute in butter until tender and set aside.

- Slow boil beans in water, add seasonings and cook for 4 hours or until tender (add Onions, Celery, and garlic about 2 hours into cooking process)

- Slice Sausage, saute and add to finished beans

- Make Rice and Eat!
